Roasting coffee is similar to managing cola. Everybody can buy cola and process it to convert into a soft drink. Everybody could theorethically "steal" the magic formula, but how many have been able to do a Coke or a Pepsi?

The 5 Ingredients of the Secret Formula Ingredient #1: The Importance of Tradition
Established in the 1940s by Mr. Carlo Bof, the company since the very beginning has been looking for just one factor: offer the best product quality.
Delighting the palate of his coffee clients (today we would call them "gourmet coffee estimators") was the idea of the founder, and it has been kept inalterated across the three generations that run the company.
Today, Mr. Ermanno Bof is managing all operations with the same care and passion originated by his grandfather Carlo, and trasmitted by his father and his uncle.
Ermanno started walking in the coffee when he was just 12. Can you imagine this small boy fascinated by the laboriouses activities done by his daddy, walking through the piles of green coffee, "helping" dad to put one more hand of green beans into the roaster? And finally assist proud, with fired eyes, to the output of those marvelous, roasted beans?
And can you imagine the disasters he did ;-) while the adults were working hard to roast the coffee that your grandfather and your dad may have tasted? Can you imagine his boy dreams, the coffee aroma in his dresses, the pride while talking with his school friends about his afternoons spent ... roasting coffee?
Ingredient #2: Passion

Do you think the ex-small boy is now taking a rest? No no: Ermanno Bof still loves waking up at 5:30am every morning, to supervise all the daily roasting operation of his - sorry, your - coffee. Does he do it only for money? Not at all, you can beat it! It is still the passion for coffee that drives him, and make the whole CoffeeIT team work so proud and willing to work 8-10-12 hours a day to create the premium CoffeeIT blends.

Passion and love aren't enough. True.
You need to keep the pace. And Bof family was never thrown away by the new technologies. New equipment and new procedures are continuosly adopted to optimize production and make you have the best Italian coffee.
So, ingredient no. 4: evolve, keep the pace, always stay updated.
Ingredient #5: Loyalty to/from selected suppliers
We buy green coffee since dozens of years always from the same small group of highly selected producers. We are not continuously looking around for cheaper prices from new, unknown suppliers. We have a mutual commitment with companies that serve us, in few cases, since 3 genarations. They always provide us only with their best quality coffee, we reward them guaranteeing a long-term business relationship.
